BURRATA LEMON PASTA

CHEESE AND CARBS, DUH

Burrata Pasta 

Recipe

  • 4 servings pasta 

  • 1 pound sausage 

  • 1 ball burrata 

  • 2 cups cherry tomatoes - halved

  • 8 basil leaves, torn

  • 1 cup Parmesan 

  • 1 lemon - juice and zest

  • 1/2 cup white wine

  • 1 cup breadcrumbs 

  • 1 tbsp red pepper flake

  • 2 tsp olive oil

  • 2 tbsp butter

Bring a pot of salted water to a boil. Then in a large sauté pan heat 1 tsp olive oil to med heat then brown sausage. Set sausage aside on a paper towel then add tomatoes and sauté til blistered. Add in wine, red pepper flake, parm, salt, pepper and 1 tbsp butter. After wine has cooked off add in lemon juice, a little pasta water then pasta and sausage. Place in serving dish and top with torn burrata. While the burrata is getting a little melty add breadcrumbs and 1 tbsp of butter in a separate pan and quickly toast. Then top with crumbs, lemon zest, basil and a glug of olive oil!

STEAK & BURRATA BOARD

CHEESE, MEAT, BREAD, GOOD

This recipe is more of an idea of how you can use what you have so feel free to change out any ingredient!

Steak and Burrata Board

Recipe

  • Skirt steak 

  • Burrata 

  • Baguette 

  • 2 cups tomatoes

  • 2 cups mushrooms

  • 2 tbsp balsamic 

  • 1 head garlic 

  • 1 large yellow or white onions - sliced 

  • 2 sprigs thyme

For Pesto

  • 2 handfuls basil 

  • Juice of 1 lemon 

  • Handful pine nuts

  • 1/2 cup olive oil 

  • 1/2 cup Parmesan 

  • 1 tsp salt 

  • 1 tsp pepper

To make the pesto combine all ingredients in a food processor and set aside. Preheat oven to 400 degrees. Then on a sheet pan place tomatoes and thyme and garlic (cut top off garlic and wrap in foil first). Coat tomatoes in olive oil, salt and pepper. Bake for 15 minutes. Heat a cast iron pan over medium heat, place in onions and slowly caramelize, stirring often. Once onions are translucent add in balsamic, let reduce 2 more minutes, remove from pan. Then wipe out pan and turn the heat up to medium high. Season steak with salt and pepper and cook to desired temp. Place bread in to oven to warm while you assemble the board. Then pour yourself a drink and SIT YOUR ASS ON THE COUCH AND HAVE A FANCY LITTLE DATE NIGHT IN SWEATPANTS CUZ THAT’S WHAT WE DO NOW!
